- 30g Capers, chopped
- 30g Gherkins, finely diced
- 5g Fresh dill, chopped
- 10ml Lemon juice
- Zest of 1 lemon
Method
- Base: Combine mashed potato, onion, spices, garlic, ginger, and chilli. Fold in fish and coriander. Bind with egg.
- Shape: Weigh 60g portions, shape into discs, and chill for 30 minutes.
- Crumb: Dust in flour, dip in egg wash, and coat in panko.
