Crisp Without the Grease

Recipe Name: Onion & Potato Bhajis with Mayo Raita

There’s a reason chefs love bhajis — they’re simple, comforting, and endlessly adaptable. But behind the golden fritter lies a challenge every kitchen recognises: bhajis are notorious for soaking up oil. That’s why they’ve long been considered a “benchmark dish” in the fryer.

When done right, onion and potato bhajis should be feather-light — strands of onion bound in spiced chickpea batter, fried until crisp, then lifted straight to the plate. The flavour comes from the balance: cumin, coriander, turmeric, and garam masala delivering warmth, while the mayo raita cools everything down with cucumber, mint, and lemon.

Fried in B-well Chef Frying Oil, the bhajis seal quickly and hold their crunch, letting the spices shine without the grease weighing them down. The dip, made with a blend of B-well Thick & Creamy and Original Tangy Mayo, adds the smoothness and zing of a classic yoghurt raita — but with the convenience of a kitchen-stable base.

Recipe

Serves: 8 | Prep Time: 15 min | Cook Time: 15 min | Total: 30 min

Ingredients

  • 2 medium onions, thinly sliced
  • 2 medium potatoes, peeled and grated
  • 2 green chillies, finely chopped (optional)
  • 2 cups chickpea (gram) flour
  • 2 tbsp fresh coriander, chopped
  • 2 tsp cumin seeds
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp salt
  • ½ tsp baking powder
  • Water as needed
  • B-well Chef Frying Oil, for frying

Mayo Raita

  • ½ cup B-well Thick & Creamy Mayo
  • ½ cup B-well Original Tangy Mayo
  • ½ cucumber, finely chopped
  • 2 tbsp mint, chopped
  • Juice of 1 lemon
  • Pinch of salt

Method

  1. Mix onions, potatoes, chillies, and coriander.
  2. Add flour, spices, salt, baking powder; add water to form thick batter.
  3. Heat B-well Chef Frying Oil to 175–180°C. Fry spoonful’s in batches until golden (3–4 min). Drain.
  4. Mix mayo’s with cucumber, mint, lemon, and salt for raita.
  5. Serve hot bhajis with mayo raita.

Chef’s Tip: Bhajis are a natural fryer test. If they stay crisp without turning oily, your oil is working at its best.
