50g white quinoa, cooked in vegetable stock
4 Peppadews, thinly sliced
1 zucchini, shaved
4 strawberries, quartered
1 carrot, peeled, shaved and marinated
20g feta cheese
10g watercress
Blueberries
Gooseberries
Orange segments
Grapefruit segments
Baby corn
Candy beets, thinly sliced
Optional: Pomegranate
Optional: You could also add a protein such as grilled chicken, smoked salmon or artisanal cold meat.
Orange and honey dressing
10ml white wine vinegar
5ml honey
2 oranges, squeezed
Salt and pepper to taste
- Mix all together, dressing the quinoa salad with the orange and honey dressing.
