A New Chapter for Zimbali Lodge

The launch signals a bold new chapter for Zimbali Lodge. The property continues its evolution into a world-class destination.

“Eleven Tribes represents our commitment to redefining luxury through authentic African storytelling and immersive guest experiences,” says Bailey Bhima, General Manager at Zimbali Lodge. “It reflects how the Lodge is evolving, while remaining true to its sense of place and heritage.”

After restoring and reimagining the Lodge’s dining offering, Eleven Tribes succeeds the iconic Thandi Restaurant. The restaurant draws inspiration from South Africa’s eleven official language groups. Its menus blend indigenous ingredients with contemporary culinary techniques. The result is a refined dining experience that feels culturally rich and globally relevant.

A Sophisticated Take on Local Culinary Traditions

Set within Zimbali’s coastal forest and overlooking the ocean, Eleven Tribes honours South Africa’s culinary staples through a modern lens. The restaurant serves breakfast, lunch and dinner. Each menu highlights seasonal produce and indigenous ingredients.

Guests can enjoy communal lunch plates inspired by local street food. A signature tasting menu showcases region-specific flavours and cooking techniques.

“Eleven Tribes is our way of putting South African ingredients and traditions on the plate in a way that feels fresh and considered,” says Executive Chef Malusi Makhize. “Guests can expect bold, balanced dishes that nod to familiar flavours while offering new interpretations.”

Eleven Tribes is more than a dining venue. The team designed it as a cultural journey. Menu curation, design elements and service style all reflect South Africa’s diverse heritage and storytelling traditions.

“Each dish and design choice is intentional,” Bhima explains. “We wanted the experience to be emotionally engaging. We wanted something guests connect with, not just consume.”

Strengthening Zimbali Lodge’s Luxury Offering

The introduction of Eleven Tribes forms a key part of Zimbali Lodge’s broader transformation under Dream Hotels and Resorts. The Lodge continues to upgrade guest rooms, public areas and conferencing facilities. The restaurant reinforces its repositioning as a refined five-star destination. It balances sophistication with a strong local identity.

“Today’s travellers are seeking experiences that feel meaningful and authentic,” says Bhima. “Food has become a primary driver in how guests choose destinations. Eleven Tribes elevates our culinary offering to meet international standards while remaining deeply rooted in South African culture.”

Zimbali Culinary Experience Beyond the Plate

Beyond daily dining, Eleven Tribes offers immersive culinary experiences. These include chef-led masterclasses, tasting journeys and seasonal events. Each experience deepens guests’ understanding of the stories, techniques and ingredients behind the dishes. Meals become memorable moments.

“Eleven Tribes embodies Dream Hotels and Resorts’ vision of experience-led hospitality,” Bhima adds. “It positions dining as a journey. It enhances the overall guest experience and leaves a lasting impression long after guests depart.”

Eleven Tribes welcomes both lodge guests and the public. Reservations are available via the Zimbali Lodge website. The restaurant offers daily breakfast, lunch and dinner service. Guests should book in advance, especially for the tasting menu and special culinary events.

Zimbali culinary heritage now lives on the plate. Eleven Tribes brings tradition, storytelling and modern refinement together in one destination.
