It’s a perennial favourite, and one that crops up on braai menus around South Africa, but that doesn’t mean you have to stick to the same-old, same-old! This recipe for Coleslaw with a Nola Twist spruces up a traditional coleslaw with tart green apple, a mix of cabbage and a sprinkle of toasted almonds and parsley. It goes well with wraps, braai, burgers or sarmies.

Coleslaw with a Nola Twist!

1 green apple
½ lemon, finely grated zest and juice
1 cup red cabbage, finely shredded
1 cup white cabbage, finely shredded
1 cup carrot, peeled and finely grated
1 bunch spring onions, thinly sliced
1 cup Nola Original mayonnaise
salt and milled black pepper

To serve:
2 Tbsp (30ml) fresh parsley, chopped
2 Tbsp (30ml) flaked almonds, toasted (optional)

  • Coarsely grate the apple, skin on, and place into a large mixing bowl. Cover with lemon juice and the lemon zest and mix well.
  • Add the red and white cabbage, carrots, and spring onions. Toss well to combine.
  • Fold in the Nola Original mayonnaise and season with salt and pepper.
  • Garnish with fresh parsley and/or toasted flaked almonds if desired.
