Two of Gauteng’s (and indeed, SA’s) finest culinary minds are heading down to Cape Town to stake their claim on the Mother City. We take a closer look.


Set to open in late 2023 in an enviable V&A Waterfront location, Marble is sure to wow Capetonians with its elegant live-fire cooking. The restaurant will boast a rooftop space, framed almost entirely by glass, which will allow diners to take in the incredible views of Table Mountain, the harbour and the Atlantic Ocean.

The 800m2 space will seat approximately 220 people, and feature a wine cellar, wrap-around patio and sundowner-ready bar.

And, while the menu is also still under development, diners can expect a similar list of dishes to Marble Johannesburg. The Cape Town location will have a Grillworks at centre stage, the famous

Marble focaccia will be made in a wood-fired oven, and there are two Jospers.
“We are making a few adjustments to the menu and adding lighter, more Mediterranean flavours – even Paella,” says Chef David Higgs. “We’ll still have our bar snack menu, and we’ll be introducing our selection of local and international aged meat cuts to clients there. Also, lots of fish – light, fresh and cooked on the coals.”

The kitchen team will be headed by Chef Matt van Niekerk. Matt has been with Marble Group since 2018 as part of the original Saint team.






Located within a heritage building on Kloof Street, Upper Union is opening this December and offers a modern, shared-dining concept. Heading up the kitchen will be Chef Amori Burger. The talented chef has previously run the pass of the trendy Joburg restaurant Van der Linde, before she moved on to oversee the culinary program at MORE Family Collection’s Lion Sands properties.

Marking MORE Family Collection’s first foray into restaurants, Upper Union sees the hospitality group offering something that’s designed to bring people together around a table. The globally inspired menu features indulgent dishes, split into big plates and

smalls. Larger plates are served to share and are best paired with a selection of the smalls. It’s all about punchy flavours packed into hearty dishes and served family style.

Complementing the culinary offering will be an intriguing cocktail menu created by the team at Just Short cocktails. The mixologists have worked closely with the kitchen to create a cocktail menu that aligns with the style of food, and the wine list will feature small scale and boutique, local wineries and winemakers.
